I'm trying to find the recipe from Jenny Jones that aired on this particular show.  Can you help?

1 tsp Olive Oil
1/2 Cup Chopped Red Onion
1 Clove Garlic, minced
1/2 Cup Chopped Red Bell Pepper
1/2 Cup chopped Anaheim pepper
15-ounce can of Black Beans
15-ounce Cannellini Beans
1 cup thick & chunky salsa (mild)
1 tbsp Chopped Cilantro
(6) 8” Flour Tortillas
6 ounces shredded reduced-fat Jack Cheese

Preheat the oven to 325°F. Lightly grease the bottom and sides of an 8-inch round casserole dish with butter. In a large sauté pan, heat the oil over medium heat. Add the onion and garlic and cook, stirring, until the onion is just translucent, about 2 minutes. Add the red and green bell peppers and the Anaheim pepper and cook, stirring, until the peppers are slightly softened, 2 to 3 minutes. Add the black and cannelloni beans, salsa and cilantro and cook just to blend the flavors, 2 to 3 minutes. Layer the ingredients in the casserole dish in this order: 1 tortilla, then 2/3 cup bean mixture and ¼ cup cheese. Repeat with the remaining tortillas, ending with the beans and cheese. Cover and bake 30 minutes. Serve alone or with extra salsa or sour cream (both optional).
