How'd they cook that?

Dear Soapdom,

I'm trying to find the recipe from Jenny Jones that aired on this particular show.  Can you help?

"Soap Talk" #524 – Airs Friday, August 18
Daytime Emmy-nominees Renee Elise Goldsberry ("One Life to Live") and Bryton ("The Young and the Restless") chat with Ty and Lisa. Plus, former talk show host Jenny Jones talks about her new cookbook, "Look Good Feel Great."

Thank You,

The Editors

1 tsp Olive Oil
1/2 Cup Chopped Red Onion
1 Clove Garlic, minced
1/2 Cup Chopped Red Bell Pepper
1/2 Cup chopped Anaheim pepper
15-ounce can of Black Beans
15-ounce Cannellini Beans
1 cup thick & chunky salsa (mild)
1 tbsp Chopped Cilantro
(6) 8” Flour Tortillas
6 ounces shredded reduced-fat Jack Cheese

Preheat the oven to 325°F. Lightly grease the bottom and sides of an 8-inch round casserole dish with butter. In a large sauté pan, heat the oil over medium heat. Add the onion and garlic and cook, stirring, until the onion is just translucent, about 2 minutes. Add the red and green bell peppers and the Anaheim pepper and cook, stirring, until the peppers are slightly softened, 2 to 3 minutes. Add the black and cannelloni beans, salsa and cilantro and cook just to blend the flavors, 2 to 3 minutes. Layer the ingredients in the casserole dish in this order: 1 tortilla, then 2/3 cup bean mixture and ¼ cup cheese. Repeat with the remaining tortillas, ending with the beans and cheese. Cover and bake 30 minutes. Serve alone or with extra salsa or sour cream (both optional).

If this is not the recipe you were looking for or if you have additional questions, please send a self-addressed, stamped envelope to Look Good, Feel Great c/o Soap Talk, P.O. BOX 4351, Hollywood, CA  90078 and ask them directly.
